Caprese Pesto Grilled Cheese (Print version)

Golden bread with melted mozzarella, fresh tomatoes, and basil pesto for a crispy, flavorful twist on classic comfort.

# What You'll Need:

→ Dairy

01 - 4 oz fresh mozzarella, sliced
02 - 2 tbsp unsalted butter, softened

→ Vegetables & Herbs

03 - 1 large ripe tomato, sliced into rounds
04 - 2 tbsp fresh basil leaves, optional for garnish

→ Spreads & Condiments

05 - 2 tbsp basil pesto
06 - Salt and freshly ground black pepper, to taste

→ Bread

07 - 4 slices rustic or sourdough bread

# How-To Steps:

01 - Spread 1/2 tbsp of softened butter evenly on one side of each bread slice.
02 - Place two bread slices butter-side down on a clean surface. Spread 1 tbsp of basil pesto over the unbuttered side of each slice.
03 - Arrange fresh mozzarella slices over the pesto-coated bread. Top with tomato rounds and season lightly with salt and pepper.
04 - Complete each sandwich by placing the remaining bread slices on top, buttered side facing outward.
05 - Preheat a nonstick skillet or griddle over medium heat until evenly warmed.
06 - Transfer sandwiches to the hot skillet. Cook for 3-4 minutes until the bread achieves golden-brown color and crispy texture.
07 - Carefully flip sandwiches and continue cooking for an additional 3-4 minutes until both sides are golden and cheese is fully melted.
08 - Remove from heat and let rest for 1-2 minutes. Slice each sandwich diagonally and garnish with fresh basil if desired.

# Tips from the pros:

01 -
  • The combination of melted mozzarella and bright pesto hits that perfect spot between comforting and exciting
  • It comes together in under 20 minutes but tastes like something from a Italian cafe
02 -
  • Low and slow is the secret to melty cheese without burning the bread, medium heat is your friend here
  • A light press with your spatula helps everything adhere together but do not smash it flat
03 -
  • Use a spatula to press down gently after flipping so the bread makes full contact with the pan
  • If the cheese is not melting but the bread is done, add a teaspoon of water to the pan and cover for 30 seconds
